Students in Melissa Melby's ANTH/BHAN 307 Nutritional Anthropology had the opportunity to engage in experiential learning about food insecurity in Fall 2021 by taking the SNAP challenge. The Supplemental Nutrition Assistance Program (SNAP) is supposed to supplement household budgets to prevent people from going hungry or sacrifice nutrition quality. Unfortunately, due to housing, medical, and transportation costs, SNAP benefits are often inadequate to allow people to get through the entire month. Students took the SNAP challenge for one week and created blogs and vlogs about their experiences.
